Ingredients

  • 10 winglets
  • 4 yellow potatoes cut in cubes
  • 1 bell pepper cut in chunks
  • 2 small carrots or 1 large carrot cut in chunks
  • 1 scallion sliced
  • 4 tsp. curry powder
  • 3 ½ tbsp. all-purpose seasoning. I used Savory Thoughts’ version
  • 2 tbsp. olive oil
  • 1 cup water
  • 2 tbsp. cornstarch

Instructions

  • Add the chicken winglets, potatoes, bell pepper, carrots, and scallions to a large bowl.
    Season with the curry powder and all-purpose seasoning.
    Drizzle with olive oil and toss until evenly coated.

  • In a small bowl, whisk together the water and cornstarch until smooth.
    Pour the mixture over the seasoned ingredients and stir well.
    Transfer everything to the air fryer basket.
    Air fry at 400°F for 30 minutes, stirring or shaking periodically during cooking.
    Then reduce the temperature to 345℉ and cook for an additional 30-35 minutes
    Cook until the chicken is fully cooked and the potatoes are fork tender.
    Serve warm over white rice and enjoy.
