  • 1 cup okra frozen or fresh; if using fresh cut into the desired size
  • 1 egg
  • 2 tbsp. water
  • Cooking oil spray
  • 1 ¼ Cup seasoned breadcrumbs not course add more if needed
  • 1 tbsp. garlic minced
  • 2 tbsp. parsley fresh and finely chopped dried parsley will work as well
  • 1 tsp. paprika
  • 2 tbsp. grated parmesan cheese
  • ½ tsp. kosher salt
  • 1 tsp. dried oregano
  • ½ tsp. ground black pepper

Instructions

  • Start by preparing your okra. If using fresh, wash, dry, and cut into your desired size. If using frozen, make sure it’s fully thawed and patted dry.
    In a small bowl, whisk together the egg and water to create your egg wash.
    In a separate bowl, combine the seasoned breadcrumbs, garlic, parsley, parmesan cheese, oregano, salt, pepper, and paprika. Mix well so everything is evenly seasoned.

  • Dip the okra into the egg mixture, then coat it in the breadcrumb mixture. Press gently so the coating sticks well.
    Preheat your air fryer to 400°F. Lightly spray the basket with oil, then arrange the okra in a single layer—don’t overcrowd.
    Lightly spray the tops with oil, then air fry for 10–12 minutes, shaking halfway through, until golden and crispy.
    Serve immediately while hot and crispy.
