  • 3 very ripe bananas
  • 1 stick butter; unsalted
  • 1 cup brown sugar
  • ½ tsp. kosher salt
  • 2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1 ½ cup all-purpose flour
  • 3 tbsp. homemade or storebought protein powder
  • 2 large eggs
  • ½ cup sliced almonds
  • 1 tsp. baking soda
  • ½ cup chocolate chips
  • 2 tbsp. sour cream or Greek yogurt

Instructions

  • Prep your ingredients: Start by peeling your bananas and placing them in a large mixing bowl. Using a fork, mash them until smooth with just a few small lumps left—this is where all that natural sweetness comes from.
    Melt your butter and set it aside to cool slightly.
    Mix the wet ingredients: To the mashed bananas, add the melted butter, brown sugar, eggs, vanilla extract, almond extract, sour cream (or Greek yogurt), and salt.
    Mix everything together until smooth and well combined. The batter should look rich, glossy, and slightly thick.
    Add the dry ingredients: Sprinkle in the flour, protein powder, and baking soda.
    Gently fold everything together until just combined. Be careful not to overmix—this keeps the bread soft and tender.
    Fold in the good stuff: Add the sliced almonds and chocolate chips, then gently fold them into the batter so they’re evenly distributed.
    Prepare for the air fryer: Lightly grease your baking dish (a small loaf pan or air fryer-safe dish works best).
    Do not use parchment paper or liners, as they can trap moisture and affect the texture.

  • Air fry low and slow: Preheat your air fryer to 300°F if your model allows.
    Place the baking dish in the air fryer and cook for about 60 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
    If the top begins to brown too quickly, loosely cover it with foil during the last part of baking.
    Let it rest (don’t skip this)
    Remove the banana bread from the air fryer and let it cool in the pan for at least 10–15 minutes.
    This helps it set properly and makes slicing much easier.
